The guidelines have been developed as a result of the UMFA’s research work to identify markers that are present in genuine manuka honey, and these include elements such as Leptosperin and Methylglyoxal (MGO).
In simple terms, the higher the number, the purer the honey; there is also an association between a higher level of MGO and the antibacterial nature of manuka honey, although MGO is not the sole factor behind manuka honey’s unique properties.
